Cold Soba Noodle Salad with Peanut Sauce

When you’re dealing with late summer heat no one wants to add to the temperature by turning on the oven. To beat the heat, this is our go to in the Soapwalla studio. Make extra so you have some for lunch or dinner the next day when it will likely be too hot to cook again!

Ingredients:

  • One package of soba noodles or gluten free noodle of your choice 
  • 2 bunches of asparagus
  • 1 large broccoli stalk 
  • 3-4 carrots
  • A fistful of cilantro

Instructions:

  • Follow the package directions on the noodles
  • Cut 1-2 bunches of asparagus into ½ inch pieces
  • Cut broccoli into ½ inch pieces
  • Grate 3-4 carrots
  • Go crazy with cilantro
  • Prepare the peanut sauce
    • 2 Tbs tamari
    • 1 Tbs toasted sesame oil
    • Juice of 2 limes
    • Small spoonful of Thai red chili paste (vegan)
    • ¼ cup or so peanut butter
    • Splash of pasta cooking water if necessary to get desired consistency – spreadable but not too thin

Combine ingredients in large bowl and mix it all together. Garnish and enjoy!
